There are two great ways to separate eggs.
The eggshell technique:
By using the two halves of the eggshell, you can pass the yolk back and forth. The cracked shells are quite sharp and they can be used to cut the whites away from the yolk.
The bowl technique:
Simply crack the eggs into a bowl and lift the yolks out of the bowl. Pinch your fingers a little to seperate the yolks. This is a good technique when you need to separate a lot of eggs.
