Chops are America’s favorite cut of pork. There are many varieties of pork chops including blade and rib chops (from the shoulder end of the loin), top and center loin chops (from the middle of the loin) and sirloin chops (from the ham end of the loin). Chops can be bone-in or boneless. They can be prepared by panbroiling, sautéing, grilling or braising. For example, thin chops (1/4-3/8 inch) are best when they are quickly sautéed. Thicker chops (3/4 inch-1 ½ inches) can be panbroiled, grilled or braised.
