For poaching eggs, use a pan that is at least 3 inches deep and fill 3/4 full with water. Add salt and vinegar. Let the water simmer. Gently add the eggs one at a time. You can tell by the jiggle and opaqueness of the egg white if your eggs are poached. This process should take between 2-4 minutes for soft poached eggs.
