How to make twice-baked potatoes

For a tasty side dish, bake your potatoes twice! By mixing just the right ingredients with your potatoes and reheating them in their shells, you create a whole new texture and taste. Be sure to poke holes in the potatoes. Potatoes contain water, which turns into steam as they bake. If the steam has no way to escape, pressure will build up and the potato will explode. So the holes that we are making now create a release for the steam. These twice-baked potatoes are filling enough to be a meal in themselves, or they always make a great side dish.
