How to make roasted lamb with potatoes

A perfect recipe for a cold winters night! Follow along with this cooking how-to video to learn how make roasted lamb with potatoes. This a hearty meal that is sure to fill you up.

Ingredients:
Roasting Lamb (1 small roasting piece for each person)
500g Zucchini
3 Cloves Garlic
1 tbsp Butter
Olive Oil Spray
1 Large Brown Onion
300ml Fresh Cream
Grated Cheese of your choice - optional (I used Parmesan)

Prepare the Potato dish
Peel and slice the potatoes thinly.
Thinly slice the onion as well.
Peel 1 garlic clove and rub the inside of the baking dish along with a spray of olive oil.
Place the potato slices in one layer, then add slices of onion. Repeat the layering process until all ingredients used.
Pour the 300ml of cream over the potato and onion.
You can add milk if you think there is not enough liquid, which should just come to the top layer of potato.

Bake in a moderate oven (180 Celsius or gas mark 8) for at least 40 minutes, I usually leave for 1 hour and top with the grated cheese for the last 20 minutes.

Prepare the Lamb

Place the Lamb on a rack in a baking tray and rub olive oil and season with salt and pepper.
As an option you can cut small holes and fill with garlic slithers.

Place in the moderate oven along with the potato dish and bake to your tasting.

30-40min Med
40-1hr Well Done

Cooking the Zucchini

Slice the zucchini in to half inch slices. Add the butter and 2 garlic cloves crushed.
Cook over a medium flame for about 20 minutes or until golden and soft.
Shake the pot every few minutes throughout the cooking process.
