This is really good, and easy to make. You just have to be patient while you are waiting for the mixture to get up to 290 degrees.

The second time I made this, I tried using a rolling pin to make thinner pieces. Just put a piece of parchment paper on top of the mixture and roll away. Leave the parchment paper on until the peanut brittle is cool, then peel off.
