Since you're capturing the gas from both plates, you're getting H2 and O2, not just the H2. Be careful handling; the mixture is explosive. Do not accumulate! If you save just the H2, it will burn, but not explode.
Stainless steel works good...go get a cheap kitchen tool at a dollar store. Also mix up some baking soda in the water. I made enough with this same type of contraption a while ago to fill a balloon.
