Make almost instant butternut squash puree

If you love the taste of butternut squash but think it's too time consuming for a weeknight (or a last-minute Thanksgiving side dish) think again. Take advantage of the pre-peeled and cubed bags of butternut squash at places such as Trader Joe's and Safeway.

Simmer the cubes in apple juice to cover until the squash is tender and the apple juice is reduced, about 20 minutes. Dump the squash and juice into a blender and puree until smooth. Season the puree to taste with warm spices such as cinnamon, nutmeg and allspice, then sweeten it with a touch of maple syrup.

In less than 30 minutes you've got a quick, satisfying side to pork chops or turkey.
