Ingredients
2 cups mushrooms diced small
1 cup monterey jack cheese
2 tablespoons of cilantro
1/2 cup chopped onions
4 tablespoons of Mis Padres Tomatillo Salsa
1 large flour tortilla
2 tablespoon of soybean oil
Radish and lime to garnish
Directions
Get a large cast-iron skillet hot
Add half the oil to pan
Saute mushrooms and half the onions and half the cilantro for 4 minutes, then add half the salsa, toss everything together in the pan, remove and set aside
Wipe the pan out and add the remaining oil
Lay the tortilla in the pan and add the cheese mushroom mixture and remaining cilantro and onions
Fold the tortilla in half, cook on both sides for 2 minutes
Remove from pan and serve, garnish with cut radish and lime wedges
