It's very easy to change a thermocouple in a hot water tank. First you'll loosen the nuts to the thermocouple, then loosen the nut to the burner tube, and also to the pilot tube. You can use an adjustable wrench with smooth teeth, that way you don't do damage to the soft material. Then, pull out the whole burner assembly and knock off all the rust and deposits.
