Good video for the novice homebrewer. He uses spring water in his brew, which may not be the best. A lot of spring water is distilled, so it doesn't contain chlorine (which is a good thing), but it also lacks trace elements of copper and zinc, which act as yeast nutrients. I'll bet that's why his yeast falls flat. You may want to try plain ol' tap water through a Brita-style filter to begin.
