Eggs, chicken, rice and soy sauce are combine in this one pot meal. Serve with extra soy sauce and perhaps some egg or spring rolls on the side. For dessert serve some fresh fruit or perhaps a nice dish of Mandarin oranges.

Ingredients

  • 1 tablespoon vegetable oil
  • 2 eggs
  • 1 pound boneless/skinless chicken breast (cut into bite sized pieces)
  • 14.5 oz. can Swanson chicken broth
  • 4 teaspoons soy sauce
  • 3 cups cups frozen stir fry vegetables
  • 2 cups instant rice, such as Minute rice, uncooked

Step 1  

Heat oil in wok or large skillet until hot.

Step 2  

Crack eggs into a small bowl and whisk well.

Step 3  

Add raw eggs to the hot vegetable oil: stir until just starting to cook.

Step 4  

Break cooked egg into small pieces using your spatula.

Step 5  

Add chicken and cook/stir until chicken is browned.

Step 6  

Add broth and soy sauce then stir and bring to a boil.

Step 7  

Add vegetables and rice stir then cover the skillet or wok.

Step 8  

Reduce heat to low and cook 5 more minutes or until chicken is done and other ingredients are hot.
