This irresistible bread pudding is a great treat for a party or dessert finale for any meal.

Ingredients

  • 50 grams butter
  • 1/2 large French Stick, known as a baguette, (about 150 grams thinly sliced)
  • 60 grams sultanas or dried cranberries
  • 2 large eggs
  • 40 grams brown sugar
  • 300 ml double cream or normal full cream
  • 300 ml milk
  • 1/4 cup Baileys
  • 3 tablespoons of your favorite flavor of jam

Step 1  

Grease the sides of an oven proof dish. Spread the bread slices with the remaining butter. Arrange the bread in the dish by overlapping them and sprinkle the dried fruits evenly.

Step 2  

Beat the eggs and sugar in a large bowl. Beat in the cream, milk and liqueur. Slowly pour the wet mixture over the bread, making sure that it doesn't overflow.

Step 3  

Press the bread slices down gently with fingers so that they are completely submerged.

Step 4  

Leave in for 20 minutes. Preheat the oven to 350 degrees F or 180 degrees C.

Step 5  

Create a Bain Marie and sprinkle with demerara sugar on the pudding.

Step 6  

Cook for 40-50 minutes. Shortly before the time is up, spread the jam on the surface of the pudding. Leave for 5 minutes and serve with extra cream or Baileys.
