A great breakfast on the weekend should include blueberry pancakes. They're easy to make!
Ingredients
- 1 1/4 cups all-purpose flour, sifted
- 3 teaspoons baking powder
- 1 tablespoon sugar (optional)
- 1/2 teaspoon salt (optional)
- 1 egg, beaten
- 1 cup milk
- 2 tablespoons canola oil
- 3/4 cup fresh or thawed and drained blueberries
Step 1
In a large bowl, mix egg, milk, oil, and sugar.
Step 2
Add flour, salt, and baking powder. Then stir well. Some lumps are OK.

Stir in blueberries.
Step 4
Preheat a non-stick frying pan or non-stick griddle until hot. Test to see if it is hot by dropping a few drops of water on the hot pan. If the water sizzles and dances, the pan is ready. Keep the pan on medium heat...if it is too high the pancakes will burn.
Step 5
Use a small ladle, scoop, or measuring cup to drop the pancake batter onto the pan. When bubbles start to appear and the edges are dry, flip them over. Remove when golden brown on both sides.
Tips
- Serve with butter and syrup.
- Make sure frozen berries are defrosted. Frozen berries will cause the pancakes to cook unevenly.
- If you do not have a non-stick pan, use oil or butter to grease the pan before spooning batter onto pan.
