This recipe will be a bit time consuming and may seem a bit lengthy—it can take up to an hour to complete depending how big of a batch you are making—but the end result is fantastic. That being said, here are the few things you will need.

  • 3 or more large potatoes (any variety)
  • 2 Pyrex baking dishes or any large containers
  • 1/3 cup of sugar
  • 1 tablespoon corn syrup
  • Access to a deep-fat fryer

Step 1 Peel and cut

Peel and cut up your potatoes into thin slices. This can be done the old-fashioned way or can be made faster using a V-Slicer.

Step 2 Soak potatoes

Fill up one of your large containers with cold water, enough to completely submerge the cut potatoes. Let the potatoes soak for at least 5 minutes to remove any excess starch. While your potatoes are soaking, you should boil some water. You will need it for step 4.

Step 3 Drain

Drain off excess water from the potatoes and set them into your second container. If you have not done so already, remove the water from your first container as you will be needing it for the next step.

Step 4 Add other ingredients

Pour some boiling water into your container and add 1/3 cup of sugar and 1 tablespoon of corn syrup. Stir until contents are dissolved.

Step 5 Soak in hot water

Transfer the french fries into the container with the hot water. Let soak for at least 10 minutes before moving on to the next step.

Step 6 Freeze

Remove french fries from water and set them onto a dish with paper towels. Set the dish into the freezer for 20 minutes.

Step 7 Cook in deep fryer

You will need to cook the french fries twice. For the first stage, let the french fries cook in the fryer for about 2 minutes. Take the french fries out and let them cool off for 5 to 10 minutes.

Step 8 Fry once more and serve

After your french fries have cooled off, put them back into the fryer for about 5 to 7 minutes, until fully cooked. Pat off excess oil with paper towels. Salt to taste.
