Cook a Simple Sinigang Na Bangus (Milkfish Stew)

Sinigang or Pinoy stew is one of the most famous and favorite meals among the Filipinos. It's also one of the most easiest to cook. Also, there are many ways to cook it, only the ingredients varies. The following tutorial is the most simplest form of cooking sinigang. This is my version of what is called sinigang na bangus.

Ingredients

  • 2 tomatoes
  • 1 onion
  • 1 milkfish
  • Water cabbage or kangkóng
  • Okra
  • Seasoning
  • Tamarind flavor cube
  • Pepper
  • Green chili
  • 6 cups water

Preparation

  1. Wash and remove the scales from the milkfish, then slice into five parts.
  2. Wash vegetables.
  3. Slice tomatoes.
  4. Slice onion.
  5. Slice okra into halves.
  6. Remove the leaves of the water cabbage from stem.
  7. Dissolve tamarind flavor cube in ½ cup of water.

Procedure

Step 1 Measure water

Put 6 cups of water into a pot.

Step 2 Add onions and tomatoes

Put all of your onions and tomatoes into the pot.

Step 3 Boil water

Bring to a boil.

Step 4 Add okra

Put your okra into the boiling water.

Step 5 Add tamarind flavor

Pour the dissolved tamarind flavoring into the pot.

Step 6 Add chili and the fish

Put the green chili and fish into the boiling water.

Warning

  • Don’t slice the chili and do not put too many in.

Step 7 Add seasoning

Add some pepper and salt or some seasoning.

Step 8 Continue boiling for 5 minutes, then add water cabbage

Let it boil for another 5 minutes and then add the water cabbage or kangkóng.

Step 9 Turn off the heat

After 5 minutes, turn off the fire. It's already cooked. Serve while hot.

Tips

The following ingredients/vegetables can also be added to enjoy the full flavor of sinigang:

  • Radish
  • Eggplant
  • Potato
  • Gabi
  • Real tamarind fruit
  • String beans
  • Kamote leaves instead of water cabbage
