The airport is a good wide open space to use for this achievement, because it's hard to steer while you're in a wheelie without losing it. However, the motorcycle is hard to keep in a wheelie -- you either pull too far back and fall off, or you don't pull far enough and drop out of the wheelie.

It's a lot easier to do the wheelie achievement with a scooter. Drive around until you find someone on a scooter and then jack it. When you're doing a wheelie on a scooter, it's almost impossible to fall off by pulling back too hard. Just hold down on the left analog stick and give it full gas -- all you need is a good level straightaway.
