How to grill squash quesadillas for vegetarians

Ingredients
2 squash diced small
1 medium size tomato diced small
1/2 medium onion diced small
1 cup monterey jack cheese
2 shakes of garlic salt
1 tablespoon of chopped cilantro
2 tablespoons of Mis Padres Salsa
1 large flour tortilla
2 tablespoons soybean oil
Directions
Get a large cast iron skillet hot
Add half the oil and saute the squash, tomato, onion and season with garlic salt. Saute for about 6 minutes, the vegetables should have color and be a bit crispy.
Remove squash mixture from the pan, set aside and wipe out pan
Add remaining oil, lay tortilla down, top with cheese, squash mixture and salsa
Fold tortilla in half and cook on each side for 2 minutes
Garnish with radish and lime
